It all started at Costco, I saw this humungous jar of 24 Strub’s Pickled Eggs made with Vinegar, Water and Sugar…for 12 bucks WoW! I remember seeing these rubbery treats at bars too. Intrigued, I found Elise Bauer’s recipe and tried 3 of the 4 variations.
My FAV is combining the Curry and the Jalapeno recipes together. The hard part is waiting a week for the flavours to penetrate into the egg…the easy part is reusing the brine for a second batch. Click on this Pickled Eggs Galore PDF to see the five versions.
