Salted Caramel Frosted Brownies

Salted Caramel Frosted Brownies are a Winner !  Hubby asked, “what did you put in the frosting to make it taste like REAL frosting ?!”  Short answer: Coconut Milk, Cocoa and Lakanto. You chill 2 cans of Full fat Coconut Milk and scoop up the healthy fat solids that rise to the top.  Whip the rich fat with Cocoa and Lakanto, a natural Monk Fruit sweetener. I used the Monk Fruit-Erythritol blend found at the Bulk Barn.

I reduced the suggested baking time from 12-15 to 10-12 minutes.  In my haste, I accidentally put ground Himalayan Sea Salt in the brownie.  Its supposed to be sprinkled on top, but it still turned out great.

My Caramel drizzle didn’t look too appetizing so I put shaved Dark Chocolate all over the top of the Brownie.  What’s a few extra calories at this point, right ?

Note:  Next time I may reduce the Maple Syrup in half by adding 1/4 Cup Lakanto or  1/4 Tsp Green Stevia.

Guilt-Free Brownies

I watched Lauren Goslin’s My Life With Food Allergies video and was intrigued by this  no egg, no flour, no bean, brownie dessert made with healthy sugars.  Nice thing about this small recipe, you get your Sugar Fix and the evidence disappears in a hurry.  My daughter usually turns her nose up on GF confections but had Two Thumbs up for Guilt-Free Brownies !

Note:  Simply combine everything in the food processor.  You can reduce the Coconut Sugar or replace the Dark Chocolate with Raw Cacao Nibs.   This sweet, sticky & gooey treat works perfectly in a small pan or double it up for a 9×9 silicone pan.

Chocolate Zucchini Muffins

This forgiving recipe for Chocolate Zucchini Muffins offers up a light, moist chocolate snack.  You can use a tad extra zucchini, less oat bran or more sugar to suit your taste.  After I read nasty things about artificial sweeteners, I’ve stopped using Splenda and Brown Sugar Splenda. I’ve had good results with alkalizing Green Leaf Stevia and potassium rich Coconut Sugar.  If it’s not on hand, there’s always Brown Sugar !

Eat plain or frost with a healthy Nutella substitute.  I use a stiffer version of  Mike Geary’s Healthy Chocolate Pudding Recipe which is on the 6 Pack ABs website, one of my favourite Blogs.  It’s high in protein and good fats using Coconut Milk, Almond Butter, Avocado and Protein Powder.  Note: I used grass-fed, Stevia sweetened Kaizen Protein Powder, both Chocolate and Vanilla Ice Cream flavours.  Delicious !
