Roasting caramelizes the sugars in vegetables and makes their flavors shine. That’s why I was intrigued by this recipe by Traci. Also, I liked the Dijon and Cream Cheese in this one pot recipe.
So I snuck in more veggies – Artichoke Hearts, Spinach, added some Jalapeno heat and and Sour Cream. There’s over 3 Cups of assorted Cheeses so stop reading if you’re on a diet. Instead of a breadcrumb topping, I sprinkled a generous amount of Nutritional Yeast and Parmesan on top.
