Yukon Gold Potato Salad

PotatoSalad

We love the flavor of yellow fleshed Potatoes.  Selena loves them in Yukon Gold Potato Salad and Mashed Potatoes.   I usually eyeball the ingredients, toss and reseason accordingly.

But Selena volunteered to make Potato Salad for her company picnic, so we painstakingly measured everything and posted it so she could make it again with confidence.

Its the usual standby but my Mom used New Potatoes and Carrots, my in-laws add Celery Seeds.

It’s best to prep at least a day in advance to allow the flavours to come together before re-seasoning.  Too much Salt or Mustard and you’ll be adding more Spuds or Yolks.

Disclaimer:  Depending on the water content of your Potatoes, you’ll have to carefully season and possibly hold back dressing until you re-season the next day.  The veggies tend to weep overnight so you don’t want your salad to be soupy.

Suggestions:   If you overcook the Potatoes, use them for Hot Potato Salad  or Hash Browns.  Worrying about overcooking can lead to undercooking.  Don’t use them.  Return the spuds to the pot or finish them by steaming them in your microwave.  Without the right texture and taste, you’re better off starting over.    Garnish with Paprika, Cherry Tomatoes, shaved Radishes and Parsley Sprigs.

Buttermilk Cornbread with Jalapeno Peppers and Corn

Corn is my FAV Funky Food but sometimes you have to give yourself a treat.  My daughter Selena loves moist Cornbread so I replaced the Kernel Corn with Creamed Corn.  I like the heat so I use Jalapenos or Serrano Peppers.  I really like lots of Celery in a Cornbread Stuffing recipe I tried, so I added finely chopped Celery, Red and Green Peppers in Buttermilk Cornbread with Jalapeno Peppers and CornJalapeno Cornbread.

The original recipe calls for a 9×9″ pan at 400 degrees but I’ve had success with a parchment lined ceramic baking dish at 350.
