gfJules Hamburger or Hot Dog Buns

Rebecca’s Buttermilk HB Buns has a biscuit like texture. It was our Standby to toast up for burgers or to sop up stew. But then I tried another recipe…

Well move over Rebecca, I think Jules Shepard’s Gluten Free Hamburger Buns are more like the White Spot HB Buns we love…soft, light and a tad sweet.  Excellent with Umami! Burgers.

Didn’t need oil or egg wash to make a nice crust as I had it on 375 instead of 350 convection.

The recipe makes 8 plus buns depending on what kind of equipment you’re using. You can use English Muffin tins, salmon tins, Mason jar lids, bun pans etc. Since I only have 6 Wilton mini spring-form pans, I slice each bun into thirds. Pickled Eggs Galore

It all started at Costco, I saw this humungous jar of 24 Strub’s Pickled Eggs made with Vinegar, Water and Sugar…for 12 bucks WoW!  I remember seeing these rubbery treats at bars too.  Intrigued, I found Elise Bauer’s recipe and tried 3 of the 4 variations.

My FAV is combining the Curry and the Jalapeno recipes together.  The hard part is waiting a week for the flavours to penetrate into the egg…the easy part is reusing the brine for a second batch.  Click on this Pickled Eggs Galore PDF to see the five versions.

You’ll die for these Red Velvet Cupcakes but you won’t use Red Dye in the process.

These babies are gluten freed and healthified.  I reduced the Sugar and the guilt by using Erythritol and Green Stevia.  Your family doesn’t need to know  that you snuck Veggies in their dessert nor do they care about the benefits of BEETs:  has anti-cancer properties, supports your brain & gut health and reduces chronic inflammation.

Sweet and Sour Pork III

1000 folks tried Sweet and Sour Pork III on AllRecipes.com and I agree with their high rating.  There’s quite a few steps but it’s worth the effort.  To healthify it, I only use enough Oil in a PFOA-free pan to sear the Pork.   I add more colourful veggies and replace some of the Sugar with Erythritol and Green Stevia…no one was the wiser.

If you like umami, add a touch of Fish Sauce when seasoning the meat.  For more heat, add minced Jalapeno Pepper.

Serve over Chinese Rice Pilaf, garnish with toasted Sesame Seeds and Cilantro.

GF Super Soft Dinner Rolls

This is the best gluten free recipe in terms of white bread texture ! It’s light, fluffy and it’s so amazing, the Gluten Free & MORE! Magazine posted Carol Kicinski’s GF Super Soft Dinner Roll recipe on their web site.  You won’t have to substitute a single thing, albeit she offers an egg-free version.  You can use any kind of Milk.  I used a can of Coconut Milk and Unsweetened Almond Milk.  I’ve had success with both hand and machine mixing.  

Just like Jamie Oliver’s GF Yorkies, the key is White Rice Flour and Glutinous Rice Flour which can be bought at most retailers or online. The Erawan Rice and Tapioca Flours at my local Asian grocery store are only $1.50 for 400 grams.

The recipe yields 24 rolls.  I filled 2 large silicone muffin trays, so my 12 rolls are twice as big!  My Kitchen Aid oven has a bread proofing setting.  I don’t cover them as they double in height.  After they rise,  remove from the oven.  Crank up to 375 degrees and set it for 18 minutes.  If it gets too dark, just tent with foil.

After they cool for 15 minutes you can wrap it up, store and reheat in a 350 degree oven.  Its odd that this recipe uses 2 Tbsp Yeast and 1 Tbsp Baking Powder…which can be next to impossible to buy in stores or on-line during the COVID-19 crisis.  I’ve had success substituting half the Yeast with 100 grams of Wild Yeast Starter (similar to Sour Dough Starter).

Slow Cooker Texas Pulled Pork

Here’s a simple Slow Cooker Texas Pulled Pork recipe, perfect for NFL Game Day. You won’t need an alarm clock, as the tantalizing aroma will  draw you out of your bed sheets!

The night before, sear the roast and place all the ingredients in the crockpot. Try the original recipe or try my suggestions for more Heat and different Sweets.  Set it on Low  10-12 hours.  Remove the excess fat and Pull the Pork.  Let the meat sit in the juices until Half Time and serve it up on  toasted GF Potato HB Buns from the Healthy Monkey Cafe franchise.

In a rush? Skip the searing, set it on High for 4-5 hours.
