Chinese Rice Pilaf

Chinese Rice Pilaf  and Black Bean Chicken was a HIT at a recent Pot Luck.  This one’s for you Marilyn !

The typical steamed Rice:Water  ratio is 2:1.  Pilaf is sautéed aromatic vegetables, garlic, a clove spiked bayleaf, seasonings and 1 1/2 parts Chicken Stock to 1 part Brown Basmati.  To avoid crunchy rice, I let this mixture sit for an hour.  My Korean friend Megan would freeze washed rice in zip lock bags as a shortcut.

What makes this Chinese ?  Sweet and savory Chinese Pork Sausages and Shiitake Mushrooms.  You can buy these ingredients at SuperStore, TNT or any Asian grocery store.

When my grandmother stuffed a Turkey, she would add Sausage, Mushrooms plus rehydrate dried Scallops and a wee bit of Shrimp to Glutinous Sticky Rice. Very yummy and fattening…my Father-in-Law would refer to it’s consistency as “Mud Ball”, no resemblance to Uncle Ben’s…

Quinoa Salad

Quinoa has all the essential amino acids we need, a complete protein. So I was excited to try a Tabbouleh Salad recipe in  “Quinoa – the Everyday Superfood 365” by Patricia Green and Carolyn Hemming.

My daughter found their recipe was too lemon-y so I doubled the Quinoa. Everyone seemed to like it better if I omitted the Parsley and Mint too.  Instead of seeding regular Tomatoes, I simply halved Grape Tomatoes.  I added Lentils, sliced spinach or kale, colorful bell peppers, acids and spices.   Then I served the Cucumber on the side as it made the salad too soggy, even if you seeded it.

So my adaptation is simply Quinoa Salad.  Its fresh, colorful and healthy.   Best served at room temperature.

I made a few substitutions to healthify this Strawberry and Spinach Salad.  Balsamic Vinegar is magical with Strawberries just ask Jamie Oliver!  Green Stevia lets me reduce the Coconut Sugar by half. The toasted, slivered Almonds and GF Fried Onions gives this colorful salad texture and crunch. I found the dressing is good for 2 to 3 salads.  A little goes a long ways as it “cooks” the greens as it sits.

Jenn, my Stinger alumni wrangled this recipe from a friend of hers.  I’m so glad she did.  It’s posted on her Two Kitchens Blog or you can open this Miso Sesame Kale Salad PDF.  I’m so addicted to this salad that I’ve included the measurements for doubling and quadrupling the recipe.  I eat it almost every day.  Note:  Just like the Strawberry & Spinach Salad recipe, let the tossed salad sit for 10 minutes or so to “cook” the kale leaves.  Savory, sweet and a bit salty…love it.

Incredible Gluten-Free Pizza

Kathy “Live the Smart Way” Smart created this Incredible Gluten-Free Pizza recipe for the Canadian Living magazine.  It’s been re-posted on the Walmart site and adapted by many.  I add chopped Jalapeno and extra spices.

Cauliflower is the “surprise” ingredient that makes it “incredible”.  Bake the crust, dress  then bake again.  Suggested Toppings:  Pizza Sauce, Onions, Bell Peppers, Chilies, Sausage, Leftover Meat Loaf/Sandwich Meat, Sun-Dried or fresh Tomatoes, Pesto, fried Eggplant and your choice of grated cheeses.

When you live in the Best Place on Earth for wild Pacific Salmon, you have to try this fantastic cured Salmon recipe, Citrus Gravlax. Firstly,  review this excellent “How to Fillet Salmon” video.  The Passionate About Fish fellow breaks down 4 major slicing steps and all the fine details on removing pin bones, silver skin and fins.  Remember you must leave the skin on for the Gravlax. Put the fish to the fridge while you zest the fruit and grind up the peppercorns (using a coffee grinder or mortar & pestle).  Make room in the fridge, prepare the pan and combine the rest of the curing mixture.

Most recipes were too salty despite washing off the curing mixture.  The Gnolls.org recipe used salt sparingly, offering step by step instructions and pictures.  I used Gnolls “sandwich” technique, reduced the salt in Emeril Lagasse’s Citrus Gravlax recipe and added Dill Weed and White Peppercorns a la Chuck Hughes.  Try my Citrus Gravlax adaption or tweak the Cajun’s original.

Killer Caesar Salad with Oyster Croutons

I really enjoyed this Caesar Salad at my friend’s house.  Sherri mentioned that she got this Killer Caesar Salad with Oyster Croutons recipe from a Chuck’s Day Off episode on the Food Network.  My PDF shows both the original and a variation.  I use Extra Virgin Olive Oil (EVOO) and substitute the flour. Anchovies and Capers are optional, but they make the dressing so Give It a GO !  There’s nothing worse than soggy salad, so go easy on the dressing and you’ll have leftovers for manana !
