Black Bean Chicken offers a really unique taste from a very simple marinade.   You can find these pungent, fermented Beans at oriental grocers or in the international section of your big chain stores.  Both brands below are under 4 bucks.  A little goes a long way.

You can go with the basics:  Chicken Legs, Black Beans, Tamari, Green Onions, Garlic & Ginger OR go all out and add Sesame Seed Oil, Fish Sauce, Cilantro, Citrus Zest and Heat – Jalapenos or Chili Flakes.

Sambal Chicken Skewers

This Bon Appetit recipe has only 7 ingredients.  Easy Peasy marinade. If you don’t have time to de-bone dark meat and barbecue, quickly cut up chicken breasts and broil.  See my Sambal Chicken Skewers PDF for all substitutions.

Caution:  The reduced marinade may be too hot to handle for some.  My teen diluted hers with Coconut Milk.

My fussy teenager was asking me when I was going to make it again so I know it’s not too spicy or “weird”. Baked Honey Sriracha Wings

These Baked Honey Sriracha Wings are a perfect Appie for the Big Game !  Sticky, sweet with a bit of heat.  Best of all…it’s made in the oven, no deep-frying.  You may want to reduce the butter in the Honey Sriracha Sauce if its a bit too rich for you.

Turkey Meat Loaf with Feta & Sun-Dried Tomato

Ever watch that Greek Goddess, Giada De Laurentiis, on the Food Network ?  I picked up “Giada at Home” from the library.  She whipped up this simple, yet tasty family favourite.  You can make it ahead of time, use leftovers for sandwiches or freeze for another day.   I made minor adjustments such as using Minit Tapioca instead of Bread Crumbs, check out the PDF for Turkey Meat Loaf.
