I’m not a Celiac nor am I allergic to Gluten. I’m a retired 60 year old Hockey player and a YMCA keener.  If I eat well and stay fit, I’ll live to be a ripe, old Centurion. I’m counting on my beloved Vancouver Canucks to hoist the Stanley Cup by then !

Anyways, I read about the anti-nutrient, Gluten, from my favorite author, Mike Geary in his Truth About Six Pack ABs article. He talks about genetically modified wheat and how it causes inflammation & leaky gut issues. In turn, I read all the details and testimonials in Wheat Belly and Grain Brain.  As a result, I’ve been Gluten-Free since November 2012. My hubby followed suit shortly after. Besides, how could he resist homemade bread ? We no longer feel bloated and uncomfortable. What a great feeling !

Right off the bat, I lost 5 lbs. My zeal to try and sample these new GF recipes got the best of me…the LBs started creeping back. GF does not mean Low Carb ! Plus hand-sliced homemade bread means bigger portions. So I tried commercial GF sandwich bread. Most are made out of rice flour,  tapioca and potato starch…bland, tasteless and not nutritious. To boot, the exorbitant prices were discouraging.

Ever since then I’ve been searching for tasty GF recipes and convenient ready-made products that are nutrient dense that won’t break the bank.  Read this Blog to save time.  I will continue to subscribe to GF newsletters, scour the library, the Web and specialty stores !

For some, the Gluten-Free transition is expensive and time-consuming. It doesn’t have to be that way for you. You need many ingredients in your GF Flour Blends and some are really tricky to use. Some flops can be turned into French Toast or Bread Crumbs, but some of it gets filed under ‘G’ ! All the GF ingredients have disclaimers re: their GF purity. Many retailers and websites price shamelessly based on what the CD market will bear. There are great deals to be had at the local veggie market, ethnic stores and even Walmart…I put them in my spreadsheet. I hate getting gouged, don’t get taken !

I’m hoping that my friends and family can benefit from my trials and tribulations.  Try alternate natural sweeteners and  shop for the best GF deals, pick up a few practical tips and be encouraged by the results.   I don’t feel deprived at all.   You too, can be Gluten Freed !  Read on…
