Killer Caesar Salad with Oyster Croutons

I really enjoyed this Caesar Salad at my friend’s house.  Sherri mentioned that she got this Killer Caesar Salad with Oyster Croutons recipe from a Chuck’s Day Off episode on the Food Network.  My PDF shows both the original and a variation.  I use Extra Virgin Olive Oil (EVOO) and substitute the flour. Anchovies and Capers are optional, but they make the dressing so Give It a GO !  There’s nothing worse than soggy salad, so go easy on the dressing and you’ll have leftovers for manana !

Zucchini Latkes

When zucchini’s are plentiful,  it’s time to make Zucchini Latkes as a side dish or Chocolate Zucchini Muffins for a snack.  The original Latke recipe has two parts zucchini to one part potato.  Tasty Yukon Gold potatoes with a 1:1 ratio works too.  For extra OOMPH, I add cayenne and chopped  jalapeno.  It’s nice to have roast garlic in olive oil on hand.  I  put extra garlic in the veggie mixture.  Then I brush the frying pan with the infused oil.   Fried food is a real treat once in a while.  See Comment below for a healthy shortcut.

Gluten Free Chocolate Cake

Executive Chef Garrett Schack is a Bluenoser that moved out to Victoria, BC.  He showcases his talents on Yum TV.  Check out this cake, see if your family  can taste the secret ingredient.  When it was India hot, I put it in the fridge so it wouldn’t go bad.  This Gluten Free Chocolate Cake is more like a Brownie, I think it tastes even better COLD !  My husband likes it better than my teenager-preferred  Guilt-Free Brownies (chewy, moist and sweeter).

Guilt-Free Brownies

I watched Lauren Goslin’s My Life With Food Allergies video and was intrigued by this  no egg, no flour, no bean, brownie dessert made with healthy sugars.  Nice thing about this small recipe, you get your Sugar Fix and the evidence disappears in a hurry.  My daughter usually turns her nose up on GF confections but had Two Thumbs up for Guilt-Free Brownies !

Note:  Simply combine everything in the food processor.  You can reduce the Coconut Sugar or replace the Dark Chocolate with Raw Cacao Nibs.   This sweet, sticky & gooey treat works perfectly in a small pan or double it up for a 9×9 silicone pan.
